  • 1/4 + 2 Tbsp Chocolate Chips

Instructions

  1. Preheat oven 350 degrees. Place rice cakes on a rack and toast in the oven for 5 minutes to crisp up (if desired, or skip this step if not). Let cool completely. Melt chocolate chips in a microwave-safe bowl for 1 minute. Microwave at 15 second intervals until chocolate chips are completely melted, stirring after each 15 seconds. Spread melted chocolate onto rice cake every with back of spoon. Place on a cooling rack. If desired, top rice cakes with coconut, chopped nuts, fruits, etc., pressing gently into chocolate. Wait for chocolate to harden, and then enjoy!
