Ingredients

  • 1 (16 oz) pkg Diced Cooked Chicken
  • 1/2 (8 oz) can Pineapple Tidbits
  • 1/3 cup Sliced or Slivered Almonds
  • 2 stalks Celery
  • 1/4 Red Onion
  • 1/4 cup Light Mayonnaise
  • 2 Tbsp Light Sour Cream
  • 1 Tbsp Honey
  • 1 1/2 tsp Dijon Mustard
  • 1 tsp Lemon Juice
  • Salt & Pepper, to taste
  • 4 Avocados
  • 4 oz Baked Potato Chips
  • 2/3 Mini Watermelon
  • 2 Tbsp Balsamic Glaze- or to taste
  • 1/4 cup Feta Cheese

Instructions

  1. Remove diced chicken from package onto a plate & quick thaw in your microwave for 30 seconds. Cut celery stalk(s) in half lengthwise & then thinly chop. Next, small dice the red onion. Add both to a mixing bowl.
  2. Next drain & chop pineapple chunks. Add to mixing bowl along with the sliced or slivered almonds.
  3. Chop the diced chicken even smaller & add to the same mixing bowl.
  4. In a separate bowl, combine sour cream, mayonnaise, lemon juice, honey, and Dijon mustard.
  5. Pour sauce over the chicken mixture & stir. Add salt and pepper to taste.
  6. Cut watermelon in half w/ the root at each end. Slice around edge to remove rind. (See video). Cut flesh into spears and place on plate. Top with balsamic glaze and feta cheese.
  7. Next, half each avocado and discard the seed. (See video) Carefully scoop around the peel of each avocado half to remove the flesh from the peel. (Flesh should remain shaped like an avocado.) Plate the avocado halves.
  8. Top avocados with equal portions of chicken salad. Serve with balsamic watermelon and chips. Enjoy!
