Ingredients

  • 24 oz boneless, skinless Chicken Thighs
  • 1/2 cup Pulp Free Orange Juice
  • 4 1/2 Tbsp Honey
  • 4 1/2 Tbsp Low Sodium Soy Sauce
  • 3 Tbsp Rice Vinegar
  • 1 1/2 tsp Sriracha Chili Sauce
  • Zest from 1 1/2 Oranges
  • 1 1/2 tsp Freeze Dried Garlic
  • 1 1/2 tsp Ground Ginger
  • 1 1/2 Tbsp Pulp Free Orange Juice
  • 1 1/2 Tbsp Corn Starch
  • 9 Green Onions
  • 3/4 cup Basmati Rice
  • 3/4 cup Orzo Pasta
  • 1 1/2 tsp Onion Powder
  • 1 1/2 (14.5 oz each) cans Low Sodium Chicken Broth
  • 3 Tbsp Smart Balance Butter
  • 6 Dole Fruit Cups, Pineapple and Mandarin Orange
  • Mrs Dash Salt & Pepper, to taste

Instructions

  1. Add butter and orzo pasta to a medium pan that has a lid. Set to medium high heat. Stir & brown orzo pasta.
  2. Once orzo is browned, add rice, onion powder & chicken broth to pan. Stir and bring to a boil.
  3. Zest the orange using a zester. (You won’t use the rest of the orange, only the zest. Slice the orange to eat if you desire.)
  4. With rice now boiling, add lid and reduce to medium low heat.
  5. In a small mixing bowl, whisk together orange juice, honey, soy sauce, rice vinegar, Siracha chili sauce, freeze dried garlic, ground ginger and orange zest.
  6. In a separate small bowl, whisk together orange juice and cornstarch. Chop green onions. Cut excess fat from chicken thighs. Discard fat. Dice chicken into bite sized pieces.
  7. Heat olive oil over medium high heat in an appropriately sized frying pan. Add chicken. Salt and pepper chicken to taste. Stir until browned.
  8. Whisk sauce once again, then stir into chicken. Then, stir in the cornstarch & orange juice mixture. Add green onions. Bring to a simmer for 3-5 minute over medium low heat, until sauce thickens. Once thickened, serve with rice and fruit cups. Enjoy!
