Instructions
-
Add butter and orzo pasta to a medium pan that has a lid. Set to medium high heat. Stir & brown orzo pasta.
-
Once orzo is browned, add rice, onion powder & chicken broth to pan. Stir and bring to a boil.
-
Zest the orange using a zester. (You won’t use the rest of the orange, only the zest. Slice the orange to eat if you desire.)
-
With rice now boiling, add lid and reduce to medium low heat.
-
In a small mixing bowl, whisk together orange juice, honey, soy sauce, rice vinegar, Siracha chili sauce, freeze dried garlic, ground ginger and orange zest.
-
In a separate small bowl, whisk together orange juice and cornstarch. Chop green onions. Cut excess fat from chicken thighs. Discard fat. Dice chicken into bite sized pieces.
-
Heat olive oil over medium high heat in an appropriately sized frying pan. Add chicken. Salt and pepper chicken to taste. Stir until browned.
-
Whisk sauce once again, then stir into chicken. Then, stir in the cornstarch & orange juice mixture. Add green onions. Bring to a simmer for 3-5 minute over medium low heat, until sauce thickens. Once thickened, serve with rice and fruit cups. Enjoy!
