Ingredients

  • 1 lb Extra Lean Ground Beef
  • 3 tsp Onion Powder
  • 1 Tbsp Mrs Dash Taco Seasoning
  • 1 tsp Chili Powder
  • 1 (23 oz) can Low Sodium Vegetable Beef Soup
  • 1 (10.5 oz) can Low Sodium Tomato Soup
  • 1 (14.5 oz) can Low Sodium Diced Tomatoes
  • 1 (15 oz) can No Salt Added Corn
  • 1/2 cup Pace Chunky Mild Salsa
  • 1 (14.5 oz) can Low Sodium Beef Broth
  • 4 Green Onions
  • 2/3 cup Mexican/Fiesta Shredded Cheese
  • 6 Tbsp Light Sour Cream
  • 4 oz Tortilla Chips
  • 4 Kiwis

Instructions

  1. In a large stock pot, brown ground beef over medium heat. Once cooked, add a paper towel to the pot to soak up grease. Repeat until grease is gone. Discard towels.
  2. Add onion powder, chili powder & taco seasoning.
  3. Add vegetable beef soup & tomato soup to stock pot. Increase temperature to medium high heat. Stir.
  4. Add diced tomatoes & undrained corn to stock pot. Stir.
  5. Add salsa & beef broth. Stir again. Bring to a boil and then reduce heat to medium.
  6. Peel & slice kiwis.
  7. Chop green onions, discarding green leafy portion. Add to soup.
  8. Ladle soup in individual bowls. Srinkle with a generous portion of cheese & a dollop of sour cream. Crumble tortilla chips over the top. Garnish with green onions and enjoy!
