Ingredients

  • 16 oz Pork Chops
  • 2 Tbsp Olive Oil
  • 1/2 Tbsp Salt Free Fajita Seasoning
  • 1 Red Onion
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 8 Fajita Flour Tortillas
  • 1 Lime
  • 1/2 cup Water
  • 1/2 cup Light Mayonnaise
  • 2 Chipotle Peppers (taken from 1 small can La Costena Chipotle Peppers in Adobo Sauce)
  • 1 Tbsp Adobo Sauce (taken from the same small can of chipotle peppers)
  • 1 cup Basmati Rice
  • 1 (14.5 oz) can Low Sodium Chicken Broth
  • 1 (10 oz) can Mild Rotel

Instructions

  1. Add rice, Rotel (undrained), and chicken broth to medium sauce pan (that has a lid). Stir and bring to a boil uncovered over high heat.
  2. Add olive oil to large frying pan (that has a lid) over medium heat. Slice red onion and add to the frying pan.
  3. As soon as the rice is boiling, cover with a lid and reduce heat to medium low.
  4. After rinsing peppers, dice into large pieces. (See video.) Add to the frying pan with the onions and stir.
  5. After cutting any fat off the pork, slice it and then half the slices again. Add to the frying pan with the vegetables and stir.
  6. Add fajita seasoning to the frying pan along with water and stir to coat evenly. Cover with a lid. Cook for 5 min, stirring every minute or so, returning the lid after each stir. Reduce spanish rice pan to low heat.
  7. Add mayonnaise, chipotle peppers and the adobo sauce to a small chopper or blender. Blend together until smooth. Cut lime in half. Squeeze lime juice over pork and veggies.
  8. Ensure pork is fully cooked but still tender. Spanish rice should now be done as well. Heat each tortilla for 10 sec. to warm them. Let each person create their own fajita, adding as much or as little sauce as they would like. Serve with spanish rice on the side. Enjoy!
