- 1 Tbsp Olive Oil
- 1 (11 oz) can Mandarin Oranges, drain & reserve
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar
- 6 oz Grilled Diced Chicken Breast
- 1 1/2 Tbsp Mandarin Orange Juice (reserved from oranges)

In a small bowl, whisk oil, rice vinegar, mandarin orange juice, soy sauce, set aside. Cook cauliflower rice risotto according to package directions. Cook chicken according to package directions.
