Ingredients

  • 20 oz Salmon, fresh or frozen
  • 1.5 cup Teriyaki Sauce (G Huges Sugar Free)
  • 1/2 cup Brown Sugar
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • Salt, to taste
  • Pepper, to taste
  • 2 cups Water
  • 15 oz Frozen Stir Fry Vegetables
  • 4 (4oz) cups Mandarin Oranges, no sugar added

Instructions

  1. Mix the teriyaki sauce, brown sugar, ginger, and garlic powder together. Add one cup of water to your Instant Pot. Set the trivet inside of the Instant Pot. Add the salmon. Pour the teriyaki mixture over the salmon, reserving about 3 to 4 tablespoons for serving. Secure the Instant Pot lid. Turn the pressure release valve to sealing. Next, use your manual setting to cook on high pressure for 3 minutes (cook for 5 minutes if using frozen salmon). Pour the frozen vegetables into a microwave safe bowl. Add 2 tsp of water and cover. Cook on high power for 3 minutes. Stir. Cover and cook on high power for an additional 2-4 minutes or until heated. Season with salt and pepper to taste. When the cooking cycle is complete, quickly turn the pressure release valve to venting to release the pressure. Serve with extra teriyaki sauce on top, and the vegetables and oranges on the side.
