Ingredients
- 2 lbs Boneless Pork Loin
- 2 Tbsp Olive Oil
- 3/4 cup Chicken Broth
- 1/2 Tbsp Paprika
- 1/2 Tbsp Garlic Powder
- 2 1/4 tsp Dried Sage
- 1/4 tsp Dried Rosemary
- 1/4 tsp Dried Marjoram
- 1/4 tsp Dried Thyme
- 1 tsp Oregano
- 1 tsp Basil
- 1 1/2 (10 oz) bags Frozen Riced Cauliflower
- 4 Gala or Fuji Apples, sliced

Instructions

In a liquid measuring cup combine the oil, broth and spices. Cut small slits with a paring knife into the pork roast. Place the pork in a slow cooker and pour the broth/spice mixture over the top of the pork. Cover the slow cooker and cook on low for 7-8 hours until the pork is tender. Remove the pork from the slow cooker and shred into pieces. Return the shredded pork to the slow cooker and toss w/the juices/liquid. Place unopened bag of cauliflower, standing up in center of microwave, & cook for 5 minutes. Serve the meat over rice with apple slices on the side. Enjoy!
