Ingredients

  • 2 Tbsp Olive Oil
  • 8 oz Chorizo, casing removed
  • 20 oz bag Hearts of Romaine Salad
  • 1/2 cup Whole Kernel Sweet Gold Corn, drained
  • 1 cup canned Black Beans, drained and rinsed
  • 2 Roma Tomatoes, diced
  • 1 1/2 Avocados, halved, seeded, peeled and diced
  • 1/2 cup Shredded Cheddar Cheese
  • 1/4 cup Tortilla Strips
  • 1/2 cup Primal Kitchen Cilantro Lime Dressing
  • 1 lb Grapes, rinsed

Instructions

  1. Heat olive oil in a large skillet over medium high heat. Add chorizo and cook until dry and crisp, about 2 minutes, making sure to crumble the chorizo as it cooks; let cool. To assemble the salad, place romaine lettuce in a large bowl; top with chorizo, corn, black beans, and tomatoes. Pour the dressing on top of the salad and gently toss to combine. Stir in avocado. Serve immediately topped with cheese and tortilla strips with grapes on the side. Enjoy!
