  • 3/4 Tbsp Olive Oil
  • 3/4 medium Yellow Onion, diced small
  • 3/4 medium Red Bell Pepper, diced small
  • 3 tsp Freeze Dried Garlic
  • 1 1/2 Tbsp Chili Powder
  • 3/4 Tbsp Ground Cumin
  • 1/4 tsp Smoked Paprika, optional
  • 3/4 lb Ground Turkey
  • 1/4 +1/8 tsp Black Pepper
  • 3/4 tsp Salt
  • 3/4 (28-ounce) can Diced Tomatoes, undrained
  • 3/4 (16-ounce) can Tomato Sauce
  • 1 1/2 cans (15-ounce each) Light or Dark Kidney Beans, rinsed and drained
  • 3/4 cup Shredded Cheddar Cheese
  • 4 Fugi or Gala Apples, sliced

Instructions

  1. In a large skillet, heat the oil over medium heat and add the onions, bell peppers and garlic. Cook, stirring often, for 2-3 minutes. Add the chili powder and cumin and stir to combine. Cook for another minute or so. Add the turkey, salt and pepper to the skillet and cook, breaking up the meat into small pieces, until the ground beef or turkey is no longer pink, 5-6 minutes. Drain any excess grease. Scoop the mixture into a slow cooker. Stir in the brown sugar, diced tomatoes, tomato sauce, and beans. Cover and cook LOW 8-9 hours or HIGH 5-6 hours. Add additional salt and pepper to taste as needed. Serve with shredded cheese on top and sliced apples on the side. Enjoy!
