Ingredients
- 1/2 cup Fresh Parsley Leaves, chopped
- 1/2 cup Fresh Basil, chopped
- 2 tbsp Fresh Chives, chopped
- 1 small Shallot, diced
- 2 tsp Freeze Dried Garlic
- 1/4 tsp Crushed Red Peppers
- 1/3 cup Extra Virgin Olive Oil
- 1 Tbsp Red Wine Vinegar
- Kosher Salt, to taste
- Black Pepper, to taste
- 1 1/2 lbs Skirt Steak
- 6 medium Eggs
- 4 (4oz) No Sugar Added Applesauce Cups
- 1 tsp Salt
- 1/2 tsp Pepper

In a medium bowl, combine parsley, basil, chives, shallot, garlic and red pepper flakes. Whisk in olive oil and vinegar: season with salt and pepper, to taste. Using paper towels, pat both sides of the steak dry; season with salt and pepper. Heat a large skillet over medium high heat until very hot, about 1-2 minutes; add canola oil. Place the steak in the middle of the skillet and cook until a dark crust has formed, about 4-5 minutes. Using tongs, flip and cook for an additional 3-4 minutes, or until desired doneness. Transfer to cutting board, and let sit. In the same skillet keep the heat to med high, crack two eggs at a time in the pan and cook for 5 minutes or until the egg whites are completely set. Once egg is set, flip it over with a spatula and cook an additional minute. Thinly slice the steak against the grain and serve w/parsley mixture, eggs, and applesauce on the side. Enjoy!
