Ingredients

  • 3/4 lb boneless, skinless chicken breast
  • Kosher Salt , to taste
  • Ground Black Pepper, to taste
  • 4 cups Low Sodium Chicken Broth
  • 2 tsp Freeze Dried Garlic
  • 1/2 Onion, diced
  • 1 1/2 Carrots, peeled & diced
  • 1 1/2 Stalks Celery, diced
  • 1/4 tsp Dried Thyme
  • 1/4 tsp Dried Rosemary
  • 1 Bay Leaf
  • 4 oz Spaghetti, broken into thirds
  • 1/2 Lemon Juice
  • 1 Tbsp Fresh Parsley, chopped
  • 8 Clementine Oranges

Instructions

  1. Season Chicken w/salt & pepper, to taste. Place chicken into a slow cooker. Stir in chicken broth, garlic, onion, carrots, celery, thyme, rosemary and bay leaves; season with salt and pepper, to taste. Cover and cook on low heat for 6-8 hours. Remove chicken from the slow cooker and shred, using two forks. Stir in pasta and chicken into the slow cooker. Cover and cook on low heat for an additional 30-40 minutes, or until pasta is tender. Stir in lemon juice and parsley. Serve immediately with clementines on the side. Enjoy!
