- 8 Low Carb Tortillas
- 1 cup Guacamole
- 1 cup Cherry Tomatoes, halved
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Corn Kernels, canned
- 4 (4 oz) Fruit Cups

Preheat oven to 400 degrees. On a baking sheet top tortilla with guacamole, tomatoes, cheese, and corn, and then top with another tortilla. Repeat with remaining tortillas to make quesadillas. Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes. Serve immediately with pineapple on the side.
