Ingredients

  • 1 1/2 (14.4 oz each) bags frozen Tri-Colored Pepper & Onion Medley
  • 1 (15 oz) can Black Beans, rinsed and drained
  • 16 oz Frozen Boneless Skinless Chicken Breast
  • 1 1/2 cups Salsa
  • 2 (10 oz each) bags Riced Cauliflower
  • 1 1/2 bunch Cilantro, chopped
  • 3 Roma Tomatoes, diced
  • 3 Limes, cut in half
  • 6 (7 oz each) Fruit Refreshers Cups
  • Cooking Spray

Instructions

  1. Lightly spray the bottom and sides of the slow cooker. Pour frozen pepper medley into the bottom of the slow cooker and place the frozen chicken breasts on top. Cover with beans and salsa. Cover slow cooker and cook on low for 6 hours. Remove chicken from slow cooker and shred with forks. Return to the slow cooker and stir until the chicken, peppers, beans, and salsa are combined. Microwave riced cauliflower unopened bag for 5 min. Serve chicken stacks over rice, add the cilantro and tomatoes on top with a squeeze of lime. Enjoy with Fruit Refreshers on the side.
