Ingredients

  • 16 oz Pork Ternderloin
  • 1 tsp Kosher Salt
  • Black Pepper, to taste
  • 1 tsp Olive Oil
  • 5 tsp Freeze Dried Garlic
  • 1 (28 oz) can Crushed Tomatoes
  • 1 (7 oz) jar Roasted Red Peppers, drained
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 1 tsp chopped fresh Parsley, divided
  • 1/2 cup Shredded Parmesan Cheese
  • 1 (12 oz) bag Veggie Spirals
  • 1 lb Grapes, washed

Instructions

  1. Season pork with salt and pepper. (Optional -- Heat a medium skillet over medium-high heat, add oil and garlic and sauté until golden brown, 1 to 1 ½ minutes; remove garlic with a slotted spoon. Add pork and brown about 2 minutes on each side. If you don’t have time for that step, you can skip it and it will still be great.) Transfer roast to the slow cooker with the garlic, tomatoes, roasted red peppers, thyme, bay leaves, and half of parsley. Cook on low 8 hours or high 4-5 hours. Remove bay leaves, shred the pork with 2 forks and top with remaining parsley. Place unopened bag of veggie spirals standing up, on a microwave-safe dish in center of microwave. Microwave on High for 6-7 minutes (water will be released from zucchini during heating and accumulate in bag). Gently tear open bag, drain excess water. Serve the Ragu over veggie spirals, top with parmesan cheese, and grapes on the side. Enjoy!
