Ingredients
- 6.5 oz (pre-cooked links) Smoked Turkey Sausage
- 1/2 Tbsp Olive Oil
- 1 1/2 Tbsp Light Mayonnaise
- 2 tsp Honey
- 1 Tbsp Mustard
- 1/2 cup Quinoa
- 1 cup Water
- 1 Avocado
- 5 oz Cherry Tomatoes
- 3 oz Baby Spinach
- 2 Green Onions
- 3 Tbsp Brianna's Real French Vinaigrette

Instructions

Bring water to a boil over high heat in a sauce pan that has a lid.

After rinsing spinach, tear it into a medium salad
serving bowl.

As soon as water is boiling, add quinoa to water and reduce heat to low. Cover w/ lid. Set a timer for 20 minutes.

Chop green onions up through part of the green leaves. Discard root end and remaining top leaves. Rinse the grape tomatoes and cut in half. Add both to spinach
bowl. Dice avocado (see video for easy way to do this) and add to spinach.

Mix mustard, mayonnaise, and honey
together.
This is the dipping sauce for the smoked turkey.

Heat olive oil over medium heat in a medium skillet.
Slice sausage on the bias. Add to skillet. Stir to brown
all sides.

Once the timer goes off, add quinoa hot to spinach
salad. Top with Brianna's Real French Vinaigrette.
Stir well.

Continue to stir sausage. Once fully browned, serve
with Mustard Sauce and Quinoa Avocado Tomato Salad. Enjoy!
