Ingredients

  • 16 oz Boneless Pork Chops
  • 2 Eggs
  • 1/2 cup Italian Style Shredded Cheese
  • 1/2 cup Panko Crumbs
  • 1/2 cup All Purpose Flour
  • Salt & Pepper, to taste
  • 1/2 tsp Garlic Powder
  • 2 Tbsp Olive Oil
  • 14-16 oz of Cauliflower Pizza Crust
  • 4 Roma Tomatoes
  • 1/2 Red Onion
  • 1 cup Italian Style Shredded Cheese
  • 2 Tbsp Basil Paste
  • 4 tsp Balsamic Glaze
  • 2 Tbsp Olive Oil
  • 4 Plums

Instructions

  1. Preheat oven to 425 degrees. Add cauliflower crust(s) to baking sheet. After preheated, place in oven. Set timer for 16 min.
  2. Wash tomato & dice. Thinly julienne the red onion.
  3. After trimming fat from pork chops, press garlic powder into each side of chops. Season both sides w/ salt & pepper.
  4. Add olive oil to a pan (that has a lid) over medium low heat. Add flour to a bowl. Beat eggs in a separate medium bowl. Add cheese to a plate. Add Panko crumbs to another bowl.
  5. Evenly coat all sides of each pork chop in this order: 1-almond flour, 2-egg wash, 3-panko crumbs, 4-egg wash again and 5-italian cheese. Arrange chops in pan with heating olive oil. Cover with a lid.
  6. Remove cauliflower crust from oven. Brush top side of cauliflower crust with olive oil then basil paste. Top with diced tomato, red onion, cheese, more diced tomato and a drizzle of balsamic glaze. Place in oven for 5 min.
  7. Flip pork chops and let cook on the other side for 3-4 min.
  8. Check on cauliflower pizza. If cheese is melted, remove from oven. Ensure pork chops are 160 degrees (internal temp) and remove from pan to serving plate. Serve with margherita cauliflower pizza and rinsed plums. Enjoy!
