This is an easy meal loaded with south-of-the-border flavors. Baked - not fried - tortillas stuffed with seasoned beef & cheese. Ingredients
- 1 Tbsp Olive Oil
- ½ Red Onion
- 4 tsp Freeze Dried Garlic
- 1 lb Extra Lean Ground Beef (96% lean 4% fat)
- 2 tsp Cumin
- 2 tsp Chilies in Adobo Sauce
- 1 tsp Chili Powder
- 8 oz Shredded Cheddar Cheese
- 8 Street Taco Tortillas
- Salt & Pepper, to taste
- Cooking Spray
- 2 Avocados
- ¼ cup Light Sour Cream
- ½ bunch Cilantro
- 1 Lime
- Salt & Pepper, to taste
- 1 (6.8 oz) packet Spanish Rice a Roni
- 2 Tbsp Butter
- 1 (14 oz) can Diced Tomatoes
- 1 ½ cups Water

Instructions

Preheat oven to 425 degrees. Melt butter in medium saucepan (that has a lid) over medium high heat. Once melted, add Rice A Roni packet. Stir continuously until pasta begins to brown, taking care not to burn.

Once browned, add water along with undrained diced tomatoes, and seasoning packet(s).

Dice red onion. In a small dish, add a small amount of water to re-hydrate the freeze dried garlic. When rice is boiling, cover with a lid and reduce heat to low. Set timer for 12 min.

Add olive oil to a large frying pan over medium heat. Once heated, add diced onion and cook for 2 min. Add ground beef and brown along with salt and pepper to taste.

Remove a chili(s) from the adobo sauce. Chop small & add to beef. Next add garlic, chili powder and cumin. Mix & simmer together. Reduce heat to low, add cheese and stir together again. When timer goes off for rice, see if it is tender. Remove from heat if it is ready.

Spray a baking sheet with cooking spray. Add a generous portion of ground beef to tortillas. Roll together & place seam down on the baking sheet. Place in oven and set timer for 5 min.

Cut stems off cilantro. Add to a blender along with the avocado flesh, sour cream and the juice of lime(s). Mix until it forms a smooth, creamy consistency. Add salt & pepper to taste.

Check the flautas. When slightly browned, remove from oven. To serve, add the flautas to a plate. Serve w/ your cilantro avocado dip either on the side or on the top of your flautas. Pair w/ Spanish rice & enjoy!
