Ingredients

  • 1 lb Extra Lean Ground Pork
  • 3 Tbsp Sesame Oil
  • 1 Tbsp Freeze Dried Garlic
  • 1 (16 oz) pkg Coleslaw / Shredded Cabbage
  • 2 medium Carrots
  • 3 Tbsp Rice Vinegar
  • 1 tsp Ginger Root
  • 2 Tbsp Low Sodium Soy Sauce
  • 2 tsp Brown Sugar
  • ½ tsp Mrs Dash Salt
  • ½ tsp Pepper
  • 2 Green Onions
  • 1 head Cauliflower
  • ½ cup Light Mayo
  • ½ Lime
  • 2 tsp Sriracha
  • 4 Apples (Fuji or Gala)
  • ½ (8 oz) pkg Neufchatel Cheese
  • ¼ cup Brown Sugar
  • 1 tsp Vanilla
  • Mrs Dash Salt & pepper, to taste
  • 1/2 cup Water

Instructions

  1. Cut cauliflower florets off stem with a pairing knife. Discard stem. Grate cauliflower into rice-sized pieces and add to medium sauce pan that has a lid. Add water, salt & pepper to riced cauliflower and place over medium low heat. Cover with a lid to steam.
  2. Cut Neufchatel cheese into small pieces and place in small mixing bowl. Set aside to soften. Cut ends off of ginger root and grate small. Peel carrot(s) and then grate. Cut root ends off of green onions and chop.
  3. Over medium heat, add sesame oil and ground pork to large sauté pan. Begin cooking & generously add salt and pepper.
  4. Firmly roll lime to release lime juice inside the peel. Add light mayonnaise to a small mixing bowl. Zest lime on top of mayo. Juice lime & add sriracha to mayo. Whisk together & set aside.
  5. Stir your pork. Add garlic, carrots and ginger to pork and continue to cook until fully cooked through. Once cooked, add soy sauce, brown sugar, & rice vinegar.
  6. Add coleslaw to ground pork. Stir to combine & reduce heat to low. Cover & let simmer.
  7. Add brown sugar, and vanilla to the mixing bowl with Neufchatel cheese. Using a fork press brown sugar into cheese and then stir until combined. Slice apples. Check cauliflower to ensure tender.
  8. Serve the pork mixture in a bowl over a scoop of riced cauliflower w/ green onions and Sriracha mayo on top. Enjoy w/ apples and fruit dip.
