Ingredients

  • 18 oz Farfella Pasta
  • 1 1/2 Tbsp Salt, used in pasta water
  • 1 (14 oz) can Black Beans
  • 1 (14 oz) can Corn
  • 1 pint Cherry Tomatoes
  • 1 Orange Bell Pepper
  • 1 Avocado
  • 6 Green Onions
  • 1 bunch Cilantro
  • 1 1/2 Tbsp Lime Juice
  • 3 Tbsp Olive Oil
  • 3/4 tsp Ground Cumin
  • 1 1/2 tsp Paprika
  • 1/3 cup Agave
  • 1 Tbsp Water
  • 3 tsp Freeze Dried Garlic
  • 3 cups Unsweetened Almond Milk
  • 6 cups frozen Strawberries
  • 6 Bananas
  • 12 Pitted Dates
  • 3 cups Ice

Instructions

  1. Fill a stock pot half-way w/ water. Place over high heat. Re-hydrate garlic w/ a bit of water in a small dish.
  2. Rinse cherry tomatoes and cut into halves. Slice the orange bell pepper into stripes. Add both to large salad bowl. Drain & rinse your black beans and corn in a strainer.
  3. Once water is boiling, add pasta and salt. Set timer per package directions to cook until al-dente.
  4. Dice the avocado into medium-sized chunks. Slice the green onion, removing the stem first. Remove stems from cilantro and chop. Add all to the salad bowl along w/ drained corn & black beans.
  5. In a bowl, whisk together lime juice, olive oil, cumin, paprika, agave & your rehydrated garlic to make your salad dressing.
  6. Drain the pasta when timer goes off & rinse under cold water. Mix in some ice cubes to continue to cool it down.
  7. If you have an aggressive blender, you can add the dates directly to the blender. If not, chop dates before adding to blender. Add bananas, strawberries, dates, and almond milk. Blend thoroughly. Next add ice and pulse to reach desired consistency.
  8. Remove ice from pasta & drain if needed. Add cold pasta to the large salad bowl. Drizzle w/ dressing. Gently stir until totally combined. Serve w/ smoothie and enjoy!
