Ingredients
- 5 oz Farfalle Pasta
- 1/2 Tbsp Olive Oil
- 2 oz Sliced Baby Bella Mushrooms
- 1/8 tsp Red Pepper Flakes
- 1/4 Yellow Onion
- 1 tsp Freeze Dried Garlic
- 1 (14.5 oz) can Italian Diced Tomatoes
- 1/2 cup (4 oz) Coconut Milk
- 1 1/2 Tbsp Fresh Parsley
- 3 cups Mixed Green Salad
- 1/2 cup Cherry or Grape Tomatoes
- 1/4 cup Home Style Real French Vinaigrette (Briannas)

Instructions

Fill a medium pan 1/2 full with water over high heat. Bring to a boil. In a small dish, add a bit of water to the Freeze Dried Garlic to rehydrate.

Chop onion (see video). Add olive oil to your largest frying pan over medium heat. Add onions and sliced baby Bella mushrooms to frying pan along with rehydrated garlic.

Add pasta to boiling water along with salt per package directions.

Add Italian diced tomatoes, red pepper flakes & coconut milk to the onion & mushroom pan. Stir together. Once combined, reduce heat to medium low.

Remove leaves from parsley and chop.

Check pasta. Once al dente, drain. Add pasta to mushroom mixture. Stir together and let simmer until heated through.

Add mixed salad to serving bowl. Rinse tomatoes. Slice through each tomato and add to the serving bowl.

Sprinkle parlsey over pasta. Serve pasta w/ salad & vinaigrette. Enjoy!
