Ingredients

  • 1 Tbsp Olive Oil
  • 2 tsp Freeze Dried Garlic
  • 1 Red Onion
  • 2 stalks Celery
  • 1 Green Bell Pepper
  • 1 (15 oz) can Red Kidney Beans
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 Tbsp Sriracha Hot Sauce
  • 2 1/2 cups (20 oz) Vegetable Broth
  • 1 1/2 cups Basmati Rice
  • 2/3 bunch of Cilantro
  • 1 (12 oz) pkg Mixed Green Salad
  • 2/3 pint Cherry or Grape Tomatoes
  • ½ cup Brianna's Real French Vinaigrette Dressing

Instructions

  1. In a medium saucepan bring vegetable broth and rice to a boil. In a small dish, add small amount of water to freeze dried garlic to rehydrate.
  2. Remove the stem, seeds and inner ribs from the green bell pepper, then small dice. Remove skin, ends and then small dice the red onion.
  3. Once rice is boiling, reduce heat to low. Cover and set timer for 12 min. Add olive oil, diced onion & green pepper to a large saute pan (that has a lid) over medium heat.
  4. Slice celery stalk(s) in half length wise and then small chop. Remove stems of cilantro. Chop the cilantro leaves.
  5. Add celery and garlic to the saute pan. Cover & cook for 3-5 min.
  6. Stir in the drained kidney beans, chopped cilantro, onion powder, salt, pepper, and hot sauce.
  7. When timer goes off, pour the rice and remaining broth into the beans mixture. Fold gently together and cook until remaining moisture is absorbed.
  8. Slice cherry tomatoes. Add mixed salad & dressing to serving bowl along with tomatoes. Enjoy along side your rice & beans!
