Ingredients

  • 2 (6 oz each) Fresh Salmon Fillets
  • 1/2 Tbsp Olive Oil
  • 1/2 Tbsp Freeze Dried Garlic
  • Salt, to taste
  • 1/2 - 1 tsp Lemon Pepper
  • 1 Tbsp Butter
  • 1/2 lb Fresh Green Beans
  • 2 Roma Tomatoes
  • 1/4 cup (2 oz) Chicken Broth
  • Salt & pepper, to taste
  • 1 tsp butter

Instructions

  1. Move oven rack to second or third highest placement. Set oven to broil on high (or convection broil if you have that setting). Rinse green beans and tomatoes. (The tomatoes are a colorful, but optional addition.)
  2. Over medium heat, melt butter in a skillet/frying pan (that has a lid). Trim ends of beans. (Trimming tip: Grab a handful of bean and jossle them in your fist against the cutting board to make the ends mostly even on one side. Cut off ends. Turn beans over in your hand and repeat to cut off the other ends.) Add trimmed beans to your skillet/frying pan as you cut off the ends. Discard ends. Cook beans for 2-3 min. stirring often to crisp up edges of beans just slightly.
  3. Cut ends off the tomatoes (if you choose to add them). Slice each one into 6 wedges. Add to beans. Generously salt & pepper the green beans. Cover a low-sided baking sheet w/ tinfoil and lightly grease with cooking spray.
  4. Add chicken broth to beans & cover with a lid bringing to a simmer over medium heat. Set timer for 6-10 min. depending on how tender you want your beans. Rehydrate freeze dried garlic in a small bowl with a small amount of water.
  5. If needed, cut salmon into appox. 6 oz fillets. Place salmon on tinfoiled baking sheet. Brush with olive oil.
  6. Sprinkle salmon with a generous amount of lemon pepper and salt. Place in oven on top rack. Set a timer for 5 minutes. Melt butter in microwave. Carefully drain off any excess water from garlic. Mix rehydrated garlic in with the melted butter.
  7. Stir beans & remove from heat after they are your desired tenderness. Slide oven rack out after salmon timer goes off. Brush or drizzle melted garlic butter over salmon. Return to oven for another 5 min.
  8. At timer, check salmon for doneness. Your buttered garlic salmon should have a carmelized brown color on top. Once salmon flakes easily with a fork, serve immediately with green beans. Enjoy!
