Ingredients
- 2 Zucchini
- 1/2 lb (not links) Turkey Breakfast Sausage
- 1/8 cup Italian Breadcrumbs
- 1/2 (24 oz) jar Mezzetta Marinara Sauce
- 1/2 tsp Freeze Dried Garlic
- 1/2 tsp Onion Powder
- 3/4 cup Italian Style Shredded Cheese (divided)
- 1 Tbsp Water
- 5 oz Angel Hair Pasta
- 2 No Sugar Added Peach Cups
- Salt (for pasta water)

Instructions

Preheat oven to 400. (375 if using convection)
Rinse zucchini & pierce several times w fork through the peel. Remove both ends & discard. Then, slice in half and scoop out flesh, saving it for later.

Lay all zucchini boats into a baking dish. Add water & cover w tin foil. Place in oven to steam.
In a small bowl, add a little bit of water to rehydrate the freeze dried garlic.

Combine sausage, onion powder & re-hydrated freeze-dried garlic to a large frying pan over medium heat. Brown sausage, stirring frequently.

Small chop your reserved zucchini flesh. Once sausage is browned, add chopped zucchini to frying pan. Sauté for 2 min.

Add breadcrumbs and half of cheese to sausage mixture and stir together.

Add marinara sauce and stir well.

Remove zucchini from oven and fill each boat generously w/ marinara mixture. Use all sauce. Top with remainder of cheese. Cover again & place back in oven for 20 min.
Fill appropriately sized stock pot half full w/ water. Bring to a boil over high heat.

To boiling water, add noodles and salt (per package instructions). Set timer to cook noodles to al-dente. Once cooked, drain noodles & cover with foil to keep warm. (You can stir in a tiny amount of butter to prevent noodles from sticking if needed.) When timer goes off for Zucchini Boats, remove from oven. Serve zucchini boats over pasta w/ peach cups on the side. Enjoy!
