Ingredients

  • 24 oz Boneless Skinless Chicken Thigh Meat
  • 3 heads Broccoli
  • 6 Carrots
  • 1 1/2 Red Bell Peppers
  • 1 1/2 Cups Snow Peas
  • 3/4 Yellow Onion
  • 3/4 cup Low Sodium Soy Sauce
  • 1/3 cup Brown Sugar
  • 3/4 Tbsp Ground Ginger
  • 1 1/2 Tbsp Freeze Dried Garlic
  • 1 Tbsp Cornstarch
  • 1 1/2 (5.5 oz) cans Pineapple Juice
  • 3 Tbsp Sesame Oil
  • Black Pepper, to taste
  • 2 1/4 cups Basmati Rice
  • 1 1/2 (14.5 oz each) cans Low Sodium Chicken Broth
  • 1/3 cup Water
  • 6 Fuji or Gala Apples

Instructions

  1. Wash vegetables. Peel carrots, cut into 3” lengths, and then slice/julienne. Remove stem & seeds from bell pepper and slice/julienne. Julienne yellow onion.
  2. With your sharpest knife, trim any fat from chicken. Dice chicken into bite size pieces. Season liberally with ground black pepper. Don’t salt.
  3. Combine soy sauce, brown sugar, freeze dried minced garlic, ground ginger, cornstarch, and pineapple juice to a mixing bowl. Mix together to create the teriyaki sauce.
  4. Add basmati rice, chicken broth and water to medium size sauce pan over high heat.
  5. Add carrots, onions, and peppers to rice. Cut broccoli florets off directly into the pan. Once boiling, add a lid and reduce heat to medium low. Set timer for 18 minutes.
  6. Heat large sauté pan over medium high heat. Once pan is hot, add sesame oil and immediately add the diced chicken.
  7. Brown chicken for 4-5 min, stirring often. Just before fully cooked, add the teriyaki sauce. Continue to stir meat over medium high heat. Once the teriyaki sauce begins to thicken, reduce heat to low. Add the snow peas.
  8. Rice and veggies should now be done. Place in bowl and top with teriyaki chicken. Prepare Fuji apples to your liking and enjoy your delicious meal!
