Ingredients

  • 4 Tomatoes
  • 1/2 lb 93/7 Ground Turkey
  • 1/2 (1 oz) pkg of Taco Seasoning
  • 1/2 cup Mexican/Fiesta Blend Shredded Cheese (divided)
  • 1/8 cup Light Sour Cream
  • 4 oz Shredded Iceberg Lettuce
  • 1/4 cup Basmati Rice
  • 1/4 cup Orzo Pasta
  • 1/2 (10 oz) can No Salt Added Rotel, mild
  • 1/2 (14 oz) can Low Sodium Beef Broth
  • 1/2 Tbsp Olive Oil
  • 1 Avocado
  • 1/2 tsp Paprika

Instructions

  1. Add rice, orzo pasta and olive oil to a medium sauce pan (that has a lid) over medium high heat. Stir intermittently , browning orzo (for about 3 minutes).
  2. Add ground beef to a large frying pan that has a lid. Add taco seasoning. Crumble & brown over medium heat.
  3. Once orzo & rice is starting to brown, add mild Rotel and beef broth. Bring to a boil over high heat. Once boiling, add lid and reduce heat to low until ready to serve.
  4. Stir ground beef. While meat is cooking, slice the tops off the tomatoes. Discard tops. Using a spoon, gently scoop out the inside of the tomatoes and add to ground beef that is cooking, crushing tomatoes.
  5. Ensure ground beef is cooked. Add part of the cheese to ground beef and stir to combine.
  6. Fill each tomato with seasoned beef. Set each tomato in the ground beef frying pan. Add lid and steam tomatoes for 4-5 minutes.
  7. Slice avocados and sprinkle with paprika. (Watch video for easy method to slice avocado.)
  8. Top Taco Tomatoes with rest of the cheese and cover pan w/ lid. Steam until cheese is melted over medium low heat. Serve tomatoes over bed of lettuce. Top with a dollop of sour cream. Serve with rice & avocados on the side.
