Ingredients

  • 1 lb Ground Turkey
  • 1 Head Butter Lettuce
  • 6 Green Onions
  • 1 1/2 tsp Freeze Dried Garlic
  • 1 Tbsp Low Sodium Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 1/4 cup Hoisin Sauce
  • 1 Tbsp Chili Paste (use as desired)
  • 1 (8 oz) can Water Chestnuts
  • 2 tsp Sesame Oil
  • 1 Tbsp Olive Oil
  • 1 cup Basmati Rice
  • 1 (14.5 oz) can Low Sodium Chicken Broth
  • 8 Carrots
  • 1/4 cup Brown Sugar
  • 2 Tbsp Smart Balance Butter

Instructions

  1. In a medium pan (that has a lid), add rice and chicken broth over high heat. In a separate small bowl, combine freeze dried garlic with a bit of water to rehydrate. Set aside.
  2. Peel carrots, cut off ends & then quarter. Cut carrots to 3” lengths. Cut ends off green onions & chop up into the start of the leafy portion. Discard ends & leaves. Drain & chop water chestnuts.
  3. Add olive oil to a frying pan that has a lid. Adjust to medium heat and add ground turkey. Crumble & brown ground turkey. Once rice water is boiling, cover rice with a lid and reduce heat to low.
  4. Add carrots to another medium pan with 1” of water in bottom. Place over medium heat. Continue to brown meat.
  5. To the turkey, add: soy sauce, rice vinegar, rehydrated garlic, sesame oil, hoisin sauce and chili paste. (chili paste tip: use full amount for medium heat OR half the amount for more mild heat). Stir together.
  6. Stir in water chestnuts & green onions. Once combined, cover w/ a lid & let simmer for 2-3 min, stirring occasionally.
  7. Rinse lettuce and tear or cut each leaf from stem. (The large and small leaves all work.) Arrange on a serving plate.
  8. Ensure carrots are tender. Drain water. Add butter and brown sugar. Stir over high heat until combined, then remove from heat. Stir rice & serve with turkey-filled lettuce wraps and sugar glazed carrots.
